Nanoencapsulation of Polyphenolic-Rich Extract from Biloxi Blueberries (Vaccinium Corymbosum L.) by Electrospraying using Zein as Encapsulating Material

Zein prolamine nanocapsules encapsulating polyphenolic compounds extracted from Biloxi blueberries were produced by means of the electrospraying technique and characterized. Nanocapsules prepared with different ratios zein:extract 10: 1, 5: 3.3: 2: using glycerol as an adjuvant. The SEM analysis showed homogeneity in morphology nanocapsules, being not completely spherical, a smooth surface, without cracks or dents, sizes around 200 to 300 nm. DSC that there no strong interactions between core materials used. study photoprotective effect revealed zein is capable photostabilizing phenolic present extract. TGA encapsulated extract presented displacement 100 °C decomposition temperature comparison unencapsulated extract, which indicates offers thermoprotection compounds.
